Dark / Light Mode with CSS Variables

In a pretty large project we faced the challenge of having to add a dark & light mode to our application. We found a (in our minds) nice & clean approach which works with css variables and can also be used in combination with theme providers (f.e. https://material-ui.com/customization/theming/).
